Roasted chicken thighs with lemon and herbs – Ingredients
salt and pepper for taste
four to six chicken thighs, boneless and skinless
two tablespoons olive oil
two cloves garlic, minced
lemon zest and juice
teaspoon dried thyme
teaspoon dried rosemary
lemon slices for garnish
fresh parsley, chopped for garnish – Instructions
Preheat oven to 400°F (200°C).
In a bowl, combine olive oil, minced garlic, lemon zest, lemon juice, thyme, rosemary, salt and pepper.
Pat the chicken thighs dry with paper towels and rub them with the prepared herb mixture.
Place chicken thighs on a baking sheet lined with parchment paper or in a baking dish.
Bake for 25 to 30 minutes or until the chicken reaches an internal temperature of 165°F (74°C) and the skin is golden and crispy.
Before serving, garnish with lemon slices and chopped parsley.
Roast turkey and vegetables – Ingredients
salt and pepper for taste
pound turkey breast or thigh, cut into strips
two tablespoons sesame oil
two cups mixed vegetables (bell peppers, broccoli, carrots, peas, etc.), cut into slices
three cloves garlic, minced
one inch ginger, grated
two tablespoons soy sauce or tamari
tablespoon rice vinegar
tablespoon honey or keto-safe sweetener (optional)
green onions, chopped for garnish
sesame seeds for decoration – Instructions
Heat sesame oil in a large skillet or wok over medium-high heat.
Add turkey strips and stir-fry until no longer pink. Remove from pan and set aside.
